Quinoa
Quinoa is a very- versatile super grain and very simple to cook. It can be eaten hot or cold and made into various recipes. I am going to give you a couple of salad recipes that we enjoy.
To cook quinoa, double the water for the amount of dry quinoa used, bring water to a boil, let boil for a few minutes 3-5, then shut burner off and leave pot on the burner and it will finish cooking. Think about what you are going to use the quinoa for and them season the water accordingly. Sometimes I will use some Adobo and olive oil and other times I will add a concentrated broth to the water.
Mexican Quinoa
Use the black bean recipe from the earlier post and just add quinoa. You can eat this over greens cold, or warm it up and have it in a tortilla with cheese on it. Top it with chopped tomatoes and avocado.
MEDITERRANEAN Quinoa
2- cups quinoa
4 - cups water
1 - Tablespoon Better Than Bullion vegetable broth
1 - large English cucumber diced
1 - bunch of parsley chopped
1 - bunch of scallions chopped
1 - pint of cherry tomatoes cut in half or quartered
Dressing
1/4 - cup lemon juice
1/2 - cup olive oil
1 - clove garlic crushed
To taste - Himalayan pink salt & White Pepper
Instructions
Cook quinoa and let cool
Add cucumbers, parsley, scallions, tomatoes.
Blend up dressing ingredients and add to salad, mix thoroughly.
If you eat Feta then that would taste really good sprinkled on top.
Serve over greens or on a pita.
