Cabbage Salad

As I was strolling through the store in the produce section I noticed a premade salad in a bag and thought "That looks really good!".  I picked it up to buy it and thought "You know, I could make this." I have a food processor, I just need to dust it off and use it!  Thought I would share what I put together as it would be a great base for a grain or meat, a salad on its own, and you could doctor it up as you like.

Ingredients:

Purple cabbage- 1/2

Green cabage- 1/2

Tri-color carrots- 2 each color

Brussel sprouts- raw about 6-8 

Kale- stripped off the stalk (half of a bunch)

Directions:

Place each thing by itself in the food processor and process until bite size, mix together

I would store it without dressing.  You could add onions, peppers, and/or healthy ramen noodles.  This could also be sauteed up and served as a side.  Asian dressing would make a great addition and perhaps some sliced almonds.
