Healthy Ice Cream
Who doesn’t love ice cream? Since going plant-based I have tried several of the alternative milk ice creams and I have to say the cashew milk one is my favorite. In searching for a brand with less sugar, Halo Top and Coconut Bliss seem to have a much lower sugar content than the other brands and I always tried to choose a brand with a “clean” ingredient list. However, in further trying to reduce the amount of refined sugar I am taking in, I decided to embark on making some on my own. I do have one of those nifty ice cream makers but for me the more simple a process is the more likely I am going to try it. I have seen many recipes for frozen banana ice cream and have always thought, “How good could this actually be?” Well, I put together this recipe which can be tweaked to your liking and I hope you like it as much as I do!
In a food processor place:
1 frozen banana
1 cup frozen berries (I have used organic dark cherries / organic antioxidant rich berry blend)
1/2 can coconut milk with the cream
1/2 teaspoon vanilla extract
1 tablespoon Cacao powder (if you want a chocolate flavor)
Drizzle maple syrup (try adding a tablespoon first and then taste, then add more only if needed)
Process until smooth
You can place any left overs (I doubt you will have any) in a glass storage dish and freeze for later
If you want any nuts added, fold these in after processing.
