Roasted Veggie Bowl

I threw this together from somethings I had already prepped and it was so good I wanted to share it.

Things that had been prepped:

One red beet, one golden beat, two sweet potatoes, cubed, coated in olive oil, seasoned with Himalayan salt, and white pepper roasted at 375 until tender

Three eggplant cubed, red onion sliced, coated in olive oil, Himalayan salt, white pepper, roasted at 375 until desired tenderness. (Going to add mushrooms next time)

Quinoa cooked

The above was prepped and in the fridge.

To make the bowl:

Shredded Lacinato kale sautéed in a cast iron skillet with olive oil, white pepper, Himalayan salt, garlic powder

Add your desired amount of the things listed above to the skillet, warm and enjoy!
