Superfood Blend Recipe
I was purchasing a superfood blend product at Costco but tired of it being in stock for a while and then not. In looking at the list of ingredients, I decided to ‘give it a go’ at making my own. It came out very well and can be used in smoothies, sprinkled on salads, yogurt, oatmeal, overnight oats etc. anywhere you wish to give yourself an extra boost. The following recipe makes about a quart and a half so you can adjust it as needed. Please store in an airtight container and preferably in the freezer (it won’t freeze). Check places like Vitacost.com and Costco for the ingredients at a cost effective price.
1 3/4 cups - quinoa flakes
1 1/2 cups - cacao nibs
1 1/4 cups - shredded unsweetened coconut
1 cup - buckwheat (purchased whole not processed)
3/4 cups - flax seeds
1/2 cups - chia seeds
1/2 cup - hemp hearts
Whirl up in a food processor and store. I use approximately 1/4 cup at a time.
